Healthy Carrot & Oatmeal Muffin Recipe

Ingredients
1 cup old-fashioned oats
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 cup Greek yoghurt
1/2 cup unsweetened applesauce
1/2 cup honey
2 eggs
1 tsp vanilla extract
1 cup grated carrots
Instructions
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the oats, flour, baking powder, baking soda, salt, and cinnamon.
In a separate bowl, whisk together the Greek yoghurt, applesauce, honey, eggs, and vanilla extract until smooth.
Add the wet ingredients to the dry ingredients and mix until just combined.
Fold in the grated carrots.
Line a muffin tin with 12 paper liners and fill each liner with the batter.
Bake for 15-20 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
These muffins can be eaten as a quick breakfast on-the-go, or as a mid-day snack to keep you full and energized until your next meal. For an even more satisfying snack, pair them with a piece of fruit or a small handful of nuts. Enjoy your delicious and nutritious breakfast!

Notes:
You can substitute the honey with maple syrup or agave nectar if you prefer.
You can also substitute applesauce with mashed bananas, pureed prunes, or pumpkin puree. These alternatives will add natural sweetness and moisture to your muffins.
Greek yoghurt can be substituted with buttermilk, sour cream, or cottage cheese. These alternatives will add creaminess and acidity to your muffins.
The muffins can be stored in an airtight container in the fridge for up to 5 days or in the freezer for up to 3 months. Just thaw them at room temperature or in the microwave before eating.
