Almonds are the unsung heroes of the nut world. Not only are they delicious, but they're also packed with nutrients that do wonders for our bodies. One of the best ways to enjoy the goodness of almonds is by making almond milk, a dairy-free alternative that's perfect for vegans, the lactose intolerant and anyone looking to cut down on dairy.
A standard serving (1 cup) of unsweetened almond milk contains only 30-40 calories, making it an ideal choice for weight loss. Almond milk is also low in carbohydrates and sugar, which means that it is a great option for those on a low-carb or diabetic diet. It is rich in vitamin E, which is an antioxidant that helps protect your cells from damage caused by free radicals. Almond milk also contains calcium, which is essential for strong bones and teeth, and is fortified with vitamin D, which helps your body absorb calcium. So, without further ado, here's the recipe for the best almond milk you'll ever taste!
The Best Easy Homemade Almond Milk Recipe
Prep Time: 10 mins Yield: 750 ml
Ingredients
1 cup of raw almonds
4 cups of filtered water
2-3 pitted dates (optional)
1 teaspoon of vanilla extract (optional)
Instructions
Soak the almonds in water overnight or for 6-8 hours. Drain and rinse them.
Place the soaked almonds in a blender with 4 cups of filtered water. Blend for 2-3 minutes until the mixture is smooth and creamy.
Strain the mixture through a nut milk bag or cheesecloth into a bowl. Squeeze the bag or cheesecloth to extract as much milk as possible.
If desired, add 2-3 pitted dates and 1 teaspoon of vanilla extract to the milk and blend again for a few seconds.
Pour the milk into a glass jar or bottle and store it in the refrigerator for up to 4 days.

Notes:
You can use the almond pulp leftover from straining the milk in recipes like smoothies, oatmeal or baked goods.
For creamier milk, use less water when blending the almonds.
Feel free to adjust the sweetness or flavour of the milk by adding more or less dates or vanilla extract.
